Ingredients:
- 1 kg of Chufas
- 4 litres of water
- Cinnamon sticks
- Lemon peel
- 125 gr sugar per litre final product
Implements:
- Electrical whisk
- Strainer
- Gauze or fine cloth
Preparation:
- Wash the Chufas and eliminate the ones which are spoiled
- Leave them to soak (10 hours in summer/24 hours in winter)
- Grind them thoroughly, beginning by 100 gr and cover them with part of the water
- Add slowly Chufas and water until a homogenous paste is obtained
- Add the remaining water and leave it to steep for 20 minutes with the cinnamon and the lemon peel
- Filter and strain by pressing the paste until it stops dripping
- Add sugar
- Chill it well
- Stir before serving
