How to make horchata?

  • 1 kg of Chufas
  • 4 litres of water
  • Cinnamon sticks
  • Lemon peel
  • 125 gr sugar per litre final product
  • Electrical whisk
  • Strainer
  • Gauze or fine cloth
  • Wash the Chufas and eliminate the ones which are spoiled
  • Leave them to soak (10 hours in summer/24 hours in winter)
  • Grind them thoroughly, beginning by 100 gr and cover them with part of the water
  • Add slowly Chufas and water until a homogenous paste is obtained
  • Add the remaining water and leave it to steep for 20 minutes with the cinnamon and the lemon peel
  • Filter and strain by pressing the paste until it stops dripping
  • Add sugar
  • Chill it well
  • Stir before serving
